Mediterranean Chicken Pitas
Create your own Mediterranean pitas that your family will think you ordered from a restaurant. These pitas are oh so good that you will be making again and again.
1 1/2 pounds chicken tenders
1 cup cucumber slices, half it first and remove seeds
1 cup plain Greek yogurt
1/4 cup red onion, sliced
3 tbsp Olive Cart Mint Jelly
2 tbsp Olive Cart Lemon Herb Olive Oil
1 tbsp Olive Cart Hummus spice blend
Pita Bread for serving
In a bowl, whip Mint Jelly to a smoother consistency. Mix in yogurt, cucumbers, onions, salt, and pepper to taste. Let the mixture sit in the fridge a minimum of 6 hours for flavors to meld. While sauce is chilling, combine Lemon Herb oil and Hummus spice in a zip bag, add chicken. Marinate at least 6 hours.
Preheat oven to 350°F. Stack pita bread inside an aluminum foil packet and place in oven while baking chicken tenders at the same time. Place chicken tenders and a parchment or foil lined baking sheet and back for 20 to 25 minutes, turning halfway through. Arrange several chicken tenders in warm pita and top with Cucumber Mint sauce.
